Starcraft Protoss Strategy PvZ?

Im new to starcraft, and would consider myself a huge noob. regardless, i would like to know what your general bo would be in a PvZ. usually i go forge-cannon-gate-sim-core-stargate then continue up the ladder. also any units that i should definitely have?

1. Well if your only planning to mass all your air units. Forge it as quick as possible and put cannons everywhere on your map. Also add some ground units just incase if Tanks from Terran do Siege Mode on your cannons. Then after that build one thing of each then build all the Stargates as fast as possible. Also make sure you make as many upgrades as fast as possible so make as many buildings for upgrades to how many upgrades it can do at a time. As for that you should be fine. It depends on what units you want. Mass Carriers is a classic. With cloaked with it so unstopabble. Or just mass those ground blue things that fire out blue balls.
